Hermine founder Chef Christopher Baxter’s life has always been defined by a pursuit of the highest standards. A summa cum laude graduate of Boston College and an honors graduate of Rutgers Law School, Chef Baxter founded his own firm, rising to become one of New Jersey’s premier criminal defense attorneys while serving as both the Prosecutor and Public Defender for Moorestown Township for over two decades of his 35-year legal career.

But twenty-one years ago, a single cake ignited a second parallel calling. Chef Baxter pursued a baking education with the same respect and scholarly passion he brought to his legal practice. He began to master one baking discipline after another, first through an intensive mentorship with Abby Dahan, the executive pastry chef at the famed Michelin-star Provenance Restaurant in Philadelphia. His skills with laminated doughs and croissants were sharpened under the tutelage of his colleague Master Baker Jimmy Griffin, a silver medalist in the Coupe du Monde and a two-time European champion.

But to perfect his craft, Chef Chris knew he had to master old-world artisan traditions. For bread and pastry, there was only one place to go: France. Chef Chris was accepted to the elite and rigorous ranks of Le Cordon Bleu Paris, the premier culinary institute in the world. There, he became a medaled chef, trained by Gregoire Bardet, the 2024 world champion in the Coupe du Monde.

Chef Baxter is now bringing his passion for artisan old-world excellence to Hermine. His advocate’s eye for detail meets his baker’s respect for tradition. Every loaf of artisan sourdough, every brioche, and every flaky croissant is produced using the exacting techniques Chef Baxter mastered in the halls of the world’s greatest culinary school. Whether it is perfect viennoiserie, a savory quiche, or handmade fresh pasta cut to your favorite size, every offering at Hermine is a testament to tradition. Chef Baxter has spent a lifetime defending the highest standards. Now he’s baking with them in honor of Hermine Bonet, his French grandmother.
